Coconut bread

Here’s the perfect recipe for leftover coconut milk and/or bananas. In this case, I used cream of coconut from a pina colada party, so I used 3/4 cup of sugar instead of a full cup. Not bad. I only had one browning banana, so the recipe was not as moist as I suspect.

Happy Mother’s Day. Miniature vanilla cupcakes filled with lemon cream cheese frosting (I used these ingredients, but improvised on the amounts), topped with fresh blueberries. Chopsticks are handy to help scoop out little dollops of filling. However, next time, I may choose more contrasting cake/fillings.

My co-worker Stacey samples what I’m calling “Broken-Ankle Brownies,” in honor of two other co-workers (not pictured) who have had recent tumbles. Success! (Not for the victims of broken ankles, I mean.)
I thought a batch of Peanut Butter Brownies with Chocolate Ganache would be the thing.
